When someone gives you "hush money," either actual cash or something else (like an awesome internship), he or she is trying to buy your silence. It's usually seen in criminal situations (or in Mafia movies), but is probably pretty common in all sketchy walks of life, like settling a court case for an extreme amount of money in order to end an embarrassing trial. Professor Fabian may claim the internship has nothing to do with Veronica seeing him with the dean's wife, but she knows she'd feel dirty if she took it.
